This course introduces nutrition basics, then expands to examine eating patterns through socio-cultural, ecological, psychological, and economic lenses. Students analyze food traditions, religious practices, and food sustainability in diverse communities and international settings. Emphasis is placed on developing cultural competence for public health and health professions in multicultural contexts. By exploring what drives dietary choices, students recognize the connections between physical, mental, and social well-being, gaining insight into broader factors shaping global nutrition and health outcomes.
